Banana Carrot Coffee Cake
INGREDIENTS
3 bananas
2 carrots
3/4 cup sugar
1/2 cup salted butter, melted
2 eggs
1 cup flour
1 teaspoon baking soda
1 teaspoon cinnamon
pinch of salt

STREUSEL TOPPING
4 T butter, melted
1/2 cup flour
1/2 cup brown sugar
1 teaspoon cinnamon
pinch of salt
INSTRUCTIONS
- Preheat oven to 350 F. Wash and grate carrots. Peel and mash bananas. Combine with carrots and set aside.
- In a separate bowl, whisk sugar, melted butter and eggs. Stir in carrots and bananas. Add flour, baking soda and cinnamon. Mix until combined. Pour into greased or buttered 9"pie plate or cake pan.
- Prepare streusel by combining ingredients. I like to use my hands to mix it all together. Sprinkle streusel over batter.
- Bake at 350F for about 35 minutes or until an inserted skewer comes out mostly clean.
