Pumpkin Cake in a Cup
INGREDIENTS
4 T flour
1 T sugar
1 tsp. baking powder
1/2 tsp. cinnamon
1/4 tsp. nutmeg (freshly grated if you have it)1/4 tsp. ground ginger
Pinch ground clovePinch salt2 T pumpkin puree1/2 tsp. vanilla extract3 T milk

STREUSEL TOPPING
2 T unsalted butter
3 T flour
2 T light brown sugar
1/4 tsp. cinnamon
1/4 tsp. kosher salt
3 T flour
2 T light brown sugar
1/4 tsp. cinnamon
1/4 tsp. kosher salt
INSTRUCTIONS
- Mix all dry ingredients in a 12 ounce microwave-safe mug.
- Stir in wet ingredients and combine well so that there are no lumps of flour.
- To make streusel, melt butter in microwave and stir in dry ingredients until it resembles wet sand. Scatter over the top of the pumpkin batter.
- Microwave on high for approximately 2 minutes.
- Top with whipped cream or ice cream, and enjoy!
