Granola

I have always been a fan of granola. I top my homemade yogurt with it, and even send my husband off to work with a little bag of it to curb his afternoon munchies. This recipe is super easy and can be varied depending upon what you like when it comes to fruits and nuts. I have a dehydrator and keep our pantry stocked with dried apples, raisins , cherries and pineapple.


Spread granola onto parchment-lined sheet pan.

Simple and Easy Granola

4 cups dry rolled Oats 

1 1/2 cups Coconut Flakes, unsweetened

1/2 cup Oat flour (you can buy oat flour or simply process rolled oats until powdery consistency)

1/2 cup Flax seed

1 cup Nuts, chopped (walnuts, almonds, pecans)

1/4 cup Brown sugar

1/2 cup Vegetable oil

Apple Cinnamon Raisin Walnut Granola
1/2 cup Maple Syrup or honey

1 teaspoon Kosher Salt

1 teaspoon Cinnamon (I add more if making Apple Raisin granola)

2 cups dried fruit 

Optional Add-Ins:

Bittersweet chocolate chips (be sure to add these after granola cools)

Spread out on parchment-lined sheet pan and bake for approximately 40 minutes at 300 degrees Fahrenheit. Rotate the pan halfway through baking time.

Let cool and break up into chunks. Add dried fruit and other items if desired. Toss everything together.
